Here is my menu plan for the rest of the week. I think I'm settling down a little, getting used to the routines of school activities and sports schedules. A few of these meals are new recipes for me (the highlighted ones). Lots of Latin flavoring this week. I have to use up a lot of items that are taking up freezer space.
Tuesday: Hamburgers, Waffle fries, corn on the cob
Wednesday: Hot dogs, chips, carrot sticks with Ranch, fruit. This is my busy day with all the kids having practice, so this is something quick.
Thursday: Cheddar Beef Enchiladas, Spanish rice w/pinto beans, salad
Friday: Orange Chicken, rice, salad
Saturday: Nachos, fruit
Sunday: Slow Cooker Latin Chicken, Spanish rice w/beans, salad
